Made to order, start to finish

Custom Cake Makers

A custom cake maker builds from a brief and not a range. There is no catalogue to choose from and no standard size list, which is exactly the point when the cake has to suit one specific celebration.

The process

How a made to order cake comes together

Most custom work follows the same shape, whether the maker calls themselves a cake maker, a designer or a studio. Knowing the sequence makes the brief easier to write.

  • You describe the celebration, not the cake. The occasion, the date, the suburb and roughly how many people. Everything else is derived from those four things.
  • Servings settle the size. Not the photograph. A maker works out tin sizes and tiers from the number of people, then shapes the design to fit.
  • The design is quoted, not priced off a list.Tiers, covering, handwork, florals and delivery are each hours of work, which is why two cakes of the same size can quote very differently.
  • You confirm, then it is held.A deposit holds the date. Design details can usually move for a while afterwards, but the servings and the date are the parts that lock first.

Worth knowing

Four things that change a custom quote

None of these is a hidden extra. They are simply the things that take time, and time is what a custom cake is priced from.

Servings

The number of people is the biggest single driver, because it decides the tin sizes and how many tiers have to be built and supported.

Covering and finish

A smooth finish, a textured buttercream and a fondant covering over ganache are three very different amounts of work.

Handwork

Sugar florals, hand painting, modelled figures and sharp edges are hours rather than ingredients. This is where quotes separate.

Delivery and setup

Collection is cheapest. A delivery to a venue with an assembly on site is a job in itself and is priced as one.

Getting started

Two things people ask

What counts as a custom cake?

Any cake made to your brief over selected from an existing range. In practice that covers almost everything on this site: a themed kids cake, a milestone birthday cake, a tiered wedding cake and a corporate cake with a logo are all custom work. What it excludes is a cake bought off a shelf or ordered from a fixed menu with a set price.

Do I need to know what I want before I enquire?

No, and most people do not. A date, a suburb, a rough guest count and one sentence about the celebration is enough to get a useful first response. If you have reference images, send two or three and say what you like in each. If you do not, describe the room and the mood and let the maker propose something.

Ready to ask

Describe the moment, not the cake

Send it once. Specialists who cover your suburb and are free on your date reply with how they would approach it and what it would cost. There is no obligation to book anybody.

Prefer the full brief? The cake brief covers the moment, the cake, your style direction and your details in four short steps.

Ask custom cake makers

Send the occasion, date and servings, and see who is available.

Also worth knowing

Copies, notice and lead times

Can a custom cake maker copy a cake I have seen?

Most will work in the same direction rather than replicate another studio's cake exactly, and that is the professional answer ahead of an unhelpful one. Send the reference, say what drew you to it, and let the maker interpret it in their own hand. You will usually get a better cake and a maker who is happier making it.

How much notice does a custom cake need?

Two to four weeks covers most celebration cakes, four or more once a theme or modelled elements are involved, and six to twelve months for a wedding. The limit is almost always the maker's calendar rather than the build, so a close date is worth asking about instead of assuming it is impossible.
